Marachekku, Iron Chekku, Cold-Pressed: What the Words Actually Mean

If you have shopped for cooking oil online in the last two years, you have read all of these on labels: cold-pressed, wood-pressed, marachekku, kachi ghani, chekku ennai, virgin, filtered.

Most buyers assume this is a ladder — that one of these words sits above the others and marks the best oil in the room. It isn't a ladder. Some of these words describe a process, some describe a machine part, and at least one of them describes nothing at all.

Here is the plain version.

Chekku means press. That's it.

Chekku is the Tamil word for the press itself. Mara means wood. So marachekku is a wood press, and marachekku ennai is oil that came out of one. In Hindi the same class of machine is called a ghani or kolhu.

The traditional design is a rotary press: a large pestle turning slowly inside a mortar, crushing seed against the wall until oil separates and drains out. It ran on bullocks for a few centuries and runs on a low-speed motor now.

Note what the word describes — the material the barrel is made of. Not the temperature, not the speed, not the purity, not the seed.

Cold-pressed is the process. Wood-pressed is a subset of it.

"Cold-pressed" means the oil was separated by mechanical pressure alone, slowly enough that friction never heats it to the point where its aroma compounds and colour break down. No solvent, no bleaching, no deodorising, no degumming.

That is the actual category. A wood press produces cold-pressed oil. So does an iron rotary chekku running at the same speed. Wood-pressed is one way of doing cold-pressing — not a grade above it, and not a separate regulatory class in India.

Which is why a bottle saying "wood-pressed" tells you less than most people think it does. It tells you what the barrel was made of.

The comparison everyone gets wrong

The meaningful line in oil extraction is not wood versus iron. It is rotary chekku versus screw expeller.

A rotary chekku — wood or iron — turns slowly and crushes. A commercial screw expeller drives seed through a tapering barrel at high speed under enormous pressure, and the friction it generates is a different order of magnitude. That is where heat enters the oil, and heat is what strips the aroma, colour and character that you paid extra for.

Both a wooden chekku and an iron chekku sit on the slow side of that line. The barrel material changes very little once the speed is the same. What the machine is made of matters less than how fast it is turning and how hot the oil is when it leaves the outlet.

If a brand tells you the wood itself adds medicinal value to the oil, you are being sold folklore. Ask instead for the operating speed and the temperature at the outlet. Those are numbers. Numbers can be checked.

So why does everyone say wood-pressed?

Because it sells. "Wood-pressed" carries a picture with it — a village, a bullock, a grandmother — and that picture does more work in a product photo than any specification sheet ever will.

There is nothing dishonest about using a wooden chekku. Plenty of good millers do. The dishonesty creeps in when the word is used to imply a quality tier that the process doesn't actually create, or when a brand prints "marachekku" on a bottle whose contents came off a screw expeller in a different district entirely.

We press in iron chekku and we say so on the label. Same rotary principle, same slow crush, same unrefined oil — better maintained, easier to keep genuinely clean, and it does not require us to tell you a story about wood.

What actually decides the quality of the oil in the bottle

Extraction is one variable out of six. The other five get almost no attention on labels, and they are the ones that separate good oil from expensive oil.

1. The seed

Grade, moisture content, and whether it was stored properly before pressing. Oil made from old or badly stored seed will be poor oil no matter what crushed it.

2. How long ago it was pressed

Unrefined oil has nothing added to hold it stable. It is closest to what it should be in the first few months. A bottle with a press date is telling you something; a bottle with only a twelve-month expiry is hiding the same information.

3. Whether anything was blended in

The most common adulteration in this category is not exotic — it is cheap refined oil quietly mixed into a premium cold-pressed one. The label will still say cold-pressed. Some sesame oils also carry added jaggery, which is legal but should be on the ingredient list. Read it: a genuine single-origin oil lists one ingredient.

4. Filtration

This is where most of the internet has it backwards, so read this one twice.

Fresh chekku oil comes off the press cloudy, carrying fine seed particles, traces of protein and moisture. A lot of brands leave it that way and sell the cloudiness as proof of authenticity. It isn't. That sediment is precisely what turns an unrefined oil rancid — it holds moisture, it oxidises, and it keeps working on the oil for as long as the bottle sits on your shelf.

Properly settled and cloth-filtered oil is clear. Not pale, not stripped — clear. It keeps its full colour and its full smell, and it stays good for months longer than the cloudy version does.

Our own test, on our own groundnut oil

From the same pressing. Oil that had sat fifteen days in a dark settling barrel with its sediment still in it measured 3.43% free fatty acid. Filtered oil, tested fresh, measured 1.30%. Free fatty acid is the standard measure of how far an oil has already broken down, and it is one of the parameters FSSAI sets a ceiling on. The cloudy bottle isn't purer. It is further along.

One honest caveat, because we would rather you hear it from us. In the first few weeks, an unfiltered oil is not necessarily worse — the suspended material carries some of the oil's own antioxidant compounds, and a few studies find early-stage stability holds up well in cloudy oil. The research is genuinely mixed on that short window. Where it stops being mixed is over months: the moisture and enzymes travelling with the sediment keep splitting the fat, free fatty acid climbs, and the unfiltered oil crosses quality limits well ahead of the filtered one. If you finish a bottle in three weeks, cloudiness costs you little. Almost nobody finishes a litre in three weeks.

The confusion comes from mixing up two different kinds of clarity. Refined oil is clear and pale and odourless, because bleaching and deodorising took the colour and aroma out along with everything else. Cloth-filtered chekku oil is clear while its colour and aroma are completely intact. Clarity was never the test. Colour and smell are the test.

5. Storage and packaging

Light and heat undo everything the slow press protected. Dark or opaque bottles, cool storage, and stock that actually moves.

All of the damage described above happened in a dark barrel, at room temperature, in under a fortnight. Which makes what some sellers do next worth understanding.

The sunlight shortcut, and why it's the worst thing you can do to an unrefined oil

There is a practice you'll see promoted as traditional and wholesome: leaving freshly pressed oil out in the sun for days so it "clears up." It appears often in the wood-pressed corner of the market, usually photographed beautifully.

It does work, in a narrow sense. Warming the oil thins it, sediment falls faster, and the top layer looks bright. You are buying that clarity with the oil itself.

Sunlight doesn't just warm oil, it drives a completely different chemistry from ordinary staling. Unrefined oil carries natural pigments — chlorophyll among them — and under light those pigments act as sensitisers, converting ordinary oxygen into a far more reactive form that attacks unsaturated fats orders of magnitude faster than normal oxidation does. There is no slow build-up phase. It starts the moment the light hits.

Here is the uncomfortable part. Unrefined oil is more vulnerable to this than refined oil, not less — and for exactly the reason it's worth buying. Refining bleaches out those pigments. Stripping the colour also strips the sensitisers. So under identical sun exposure, the unrefined oil degrades faster than the refined one, and it burns through its own vitamin E doing it, because the tocopherols are consumed defending the oil.

Add the heat, and the moisture and lipase still sitting in the unsettled sediment, and hydrolysis runs alongside the oxidation. The free fatty acids that produces are themselves pro-oxidant, so each process feeds the other.

The result is an oil that reaches your kitchen already partway through its life — sold at a premium, with a clarity that is evidence of the damage rather than the quality. On the narrow measure of oxidative freshness, a bottle of ordinary refined oil off a supermarket shelf can genuinely be in better condition than a sun-clarified artisan oil. That isn't an argument for refined oil. It's an argument that clarity has to be earned the right way.

Proper filtration gets you the same clear bottle in an hour, in the dark, with none of it.

6. Whether you can trace the batch

Everything above is a claim until you can check one specific bottle against one specific pressing.

Before you buy, check these five things

  • The ingredient list. One ingredient. If there are two, know what the second one is and why.
  • A press or batch date, not just an expiry date.
  • Colour and smell — not clarity. Cold-pressed gingelly is amber to dark brown and smells strongly nutty. Cold-pressed groundnut is deep golden with a clear roasted-nut smell. Anything pale and odourless has been refined, whatever the front label says. But a clear bottle that still has deep colour and a strong smell is a well-filtered oil, and that is what you want.
  • The coconut oil fridge test. Pure coconut oil sets to a uniform white solid at around 24°C. If a layer stays liquid above the solid part, another oil has been mixed in.
  • The price. Cold-pressing yields far less oil per kilo of seed than expeller or solvent extraction. That cost has to appear somewhere. A cold-pressed price that undercuts refined oil is not a bargain — it is a claim that doesn't add up.

Where we stand

Frequently asked questions

Is wood-pressed oil better than cold-pressed oil?

The question is built on a wrong assumption. Wood-pressed oil is cold-pressed oil — a wooden press is one type of cold press. The useful comparison is between a slow rotary chekku of any material and a high-speed screw expeller.

What is the difference between marachekku and iron chekku oil?

The material of the press. Mara means wood, so a marachekku has a wooden barrel; an iron chekku has an iron one. Both use the same slow rotary crushing action. The barrel material has far less effect on the oil than the speed of the press and the temperature at the outlet.

Does chekku oil have to be cold-pressed?

A traditional rotary chekku run at low speed produces cold-pressed oil. But "chekku" on a label is not a regulated term, and some oils sold under it are produced by faster methods. Look for the process stated explicitly, along with a press date.

How can I tell if cold-pressed oil is real?

Check the ingredient list for a single ingredient, look for a press or batch date, and use your senses — real cold-pressed oil has strong colour and a strong smell of its seed. For coconut oil, the refrigerator test is the simplest home check.

Should cold-pressed oil be cloudy or clear?

Clear, if it has been filtered properly. Cloudiness means suspended seed sediment and moisture are still in the bottle, and those shorten the oil's life considerably. What you should not accept is oil that is clear and pale and odourless — that is refining, not filtration. A well cloth-filtered cold-pressed oil is clear while keeping its full colour and aroma.

Is oil that has been kept in the sun to clear better quality?

No — it is worse, and worse specifically because the oil is unrefined. Light drives a fast oxidation pathway through the oil's own natural pigments, and the heat accelerates breakdown alongside it. The clarity is real, but you are seeing the result of damage rather than care. Filtration achieves the same clarity without exposing the oil to light at all.

Why is cold-pressed oil more expensive?

Slow pressing extracts less oil from the same quantity of seed than an expeller or a solvent process, and nothing is added afterwards to increase volume or shelf life. The yield gap is most of the price gap.

The counter-finding, in the interest of completeness

  1. The same 1999 JAOCS paper (ref. 6) found the opposite pattern in freshly processed cloudy virgin olive oils, where the suspended material appeared to stabilise the oil against both oxidation and hydrolysis in the short term. Several later reviews describe the oxidative-stability question for veiled oil as genuinely unresolved. The hydrolysis findings over long storage (refs. 1–3, 5) are far more consistent, which is why our claim is about the medium to long run rather than the first few weeks.
